Pizza! Pizza!  Tomato soup and tomato juice, too!  And ketchup?  Yes!  Add these to your diet and you are providing your body with good sources of lycopene.

Lycopene is an antioxidant.  It's what makes tomatoes and other foods red.  It neutralizes free radicals.  Think of Pac-Man (are we dating ourselves here?) going around eating all those dots.  Those free radicals can damage our body's cells which may then lead to cancer and cardiovascular disease such as high blood pressure, heart attacks and stroke.

Some other possible benefits of lycopene include:
*          a lower risk of macular degeneration, a common cause of blindness in the elderly,
*          prevention of LDL cholesterol oxidation which causes cardiovascular disease
*          decreased risk of certain cancers such as gastrointestinal and prostate cancer.

Much of the research to confirm lycopene's benefits is ongoing.  To date, we do know that tomatoes contain many other helpful nutrients in addition to lycopene.  These additional nutrients are:  beta-carotene, folate, potassium and vitamin C.

Here's good news for those who don't particularly care for tomatoes in the raw:  The heat processing of tomatoes make the lycopene 2-3 times more bioavailable.  That's good news if you prefer spaghetti over a raw tomato.  Spaghetti sauce, tomato paste and tomato juice have a higher content of lycopene than raw tomatoes.

How much should we consume?  At least 5-10 mg per day is currently recommended.
